I appreciate pasta, all pasta! Yet, in my opinion, there is nothing like gnocchi. I love the feel of it on my tongue and the softness as I bite into it, it’s like a little pasta cloud. It’s very much about the texture to me.

I haven’t allowed myself pasta since I started counting calories because I always want a large plate of it and the calories are high. I was grocery shopping last week and I saw a package of gnocchi. When I checked the package I saw that it was 120 calories per half cup. I’ve come to the realization that one cup of food poured onto a plate is a lot more food than I had previously thought. I realized that I could come up with a dish that would satisfy my hunger and my love for gnocchi. I adapted this recipe from a dish called Sausage Gnocchi with Red Pepper-Almond Sauce from the Slow Roasted Italian.

Ingredients:
– 5 sliced Marc Angelo Italian Chicken Sausage, 400 calories
– 1 package (500 g) Mastro Potato Gnocchi, 704 calories
– 1 1/4 c. diced Walla Walla Onions, 80 calories
– 1 cup diced, orange bell peppers, 29 calories
– 1/2 c. diced celery, 8 calories
– 3 pressed cloves of garlic, 13 calories
– 2 tsp. cold pressed, extra virgin olive oil, 80 calories
– 2 cups Western Family canned Diced Tomatoes, 80 calories
– 1 tsp. onion powder, 8 calories
– 1 tsp. crumbled Italian seasoning, 0 calories
– 1/3 c. Kraft Shaved Parmesan, 147 calories

Directions:

In a large fry pan brown sausages from frozen on medium heat. I like to cover the sausages at the beginning until they defrost. Though it does create a mess in the pan when the liquid dries. Slice the cooked sausages and set aside for the time being.

Following the directions on the package of gnocchi, prepare the water to boil in a medium pot.

In another pot, large enough to hold all the ingredients, heat olive oil on medium and sautée onion, bell pepper, and celery. When they are almost complete add the garlic and sautée for 5 minutes more. Add the diced tomatoes, onion powder, Italian seasoning and sausages let simmer on low, stirring frequently, for 8-10 minutes.

Preheat oven to 350ºF / 175ºC.

When the gnocchi is ready strain in a colander and rinse well. Add cooked gnocchi to the vegetable mixture and stir well.

Place contents of pot in a 2.5 quart casserole dish. Sprinkle parmesan shavings on top. Cover and bake for 30 minutes so the gnocchi absorbs the flavour.

Yield: 6 one cup servings, each one cup serving is 258 calories.

I would make this dish over and over. I had company the evening I made it and it was a hit. Add some asparagus on the side  or maybe a cup or two of salad and you have a great meal for 300-350 calories depending on the salad dressing you use.
